Berry Tarts

Berry Tarts
Ingredients
1 cup (8 fl oz) Mixed Berry Nepro chilled
2 Tbsp sugar-free strawberry syrup
One 1-oz package instant vanilla sugar-free pudding mix
½ cup sugar-free nondairy whipped topping
1 ½ cups favorite mixed berries, rinsed
Two 2.1-oz packages mini phyllo shells (15 per box)
Fresh mint, garnish
Confectioners' sugar, optional garnish
Directions
1. Combine the Nepro with Carb Steady and sugar-free strawberry syrup in a mixing bowl and whisk in the pudding mix.
2. Mix vigorously for 2 minutes until thick.
3. Fold in the whipped topping.
4. Pour into an air-tight container and chill for 30 minutes or up to 24 hours or until ready to assemble the tarts.
5. To assemble the tarts, preheat the oven to 350 degrees. Place the shells on a baking sheet and bake for 4 to 5 minutes.
6. Transfer the shells to a wire rack and cool.
7. Fill each tart shell with the berry filling; place the fresh berries on top of each tart. Garnish with fresh mint and a light dusting of confectioners' sugar.

Cranberry Crunch Muffins

Cranberry Crunch Muffins
Ingredients
2 cups all-purpose flour
2 tsp baking powder
½ cup artificial sweetener, such as Splenda®
¼ cup wheat germ
¼ cup sliced almonds
1 Tbsp unsalted butter
1 cup (8 fl oz) Homemade Vanilla Nepro
1 large egg
⅓ cup vegetable oil
½ tsp pure vanilla extract
2 Tbsp fresh orange zest
½ cup chopped dried cranberries
Directions
1. Preheat the oven to 400 degrees. Line a 12-cup muffin tin with paper liners. Set aside.
2. In a large mixing bowl, combine the flour, baking powder, artificial sweetener and wheat germ. Remove ¼ cup of the flour mixture and place in a separate smaller bowl.
3. To the ¼ cup flour mixture, add the sliced almonds and butter. Using a fork, combine this mixture until it is crumbly. Set aside almond crunch mixture.
4. Whisk together the Nepro, egg, vegetable oil, vanilla extract and orange zest. Pour the mixture into the remaining flour mixture and fold together (just to combine). Add the dried cranberries and gently fold into batter. Do not overblend the batter.
5. Spoon the batter into the prepared muffin pan. Sprinkle the almond crunch mixture (see step #3) evenly over each cup. Bake for 14 to 16 minutes. Remove the muffins from the pan immediately and transfer them to a wire rack to cool. Serve warm. Muffins can be cooled, wrapped individually in airtight bags, and frozen up to 1 month.

Crunchy French Toast
Ingredients
1 cup (8 fl oz) Homemade Vanilla Nepro
1 large egg
½ tsp ground cinnamon
1 tsp pure vanilla extract
Zest of one orange
6 pieces white bread, thick cut
1 cup corn flake cereal, crushed
Nonstick vegetable oil cooking spray
6 Tbsp sugar-free syrup
Directions
1. In a large shallow dish, whisk together the Nepro, egg, cinnamon, vanilla, and zest.
2. Dip each slice of bread into the liquid mixture, turning each slice once to allow all of the liquid to be absorbed.
3. Transfer them to a tray.
4. Dip both sides of the bread into the crushed cereal and return them to the tray.
5. Spray a nonstick pan with cooking spray and heat over medium-high heat. Place 3 slices of the bread in the pan and cook until golden brown, flip the slices over and cook the other side until it is golden brown.
6. Serve each piece warm with 1 Tbsp sugar-free syrup.
(Note: The French toast may be prepared ahead of time, frozen in individual packages, and reheated for serving.)

Mixed Berry Frozen Bars
Ingredients
One (1 ounce) package raspberry flavored sugar-free gelatin
¼ cup hot water
2 tablespoons sugar-free strawberry syrup
1 cup (8 fl oz) Mixed Berry Nepro
1 ¼ cups frozen raspberries, thawed and mashed (about ½ cup)
½ cup sugar-free non-dairy whipped topping
Wooden/plastic sticks or plastic spoons
Directions
1. In a small mixing bowl, combine the gelatin and hot water and whisk to dissolve. Stir in the strawberry syrup.
2. In a large mixing bowl, whisk together the Nepro, gelatin mixture and mashed berries. Fold in the whipped topping.
3. Spoon the mixture into frozen bar molds or 5-ounce paper cups. Place a wooden stick or plastic spoon through the center of each mold or cup to create a handle.
4. Transfer the cups to a tray if necessary and freeze until firm, about 4 to 5 hours.
5. Release the bars from the molds or paper cups by dipping them into warm water for a few seconds. Serve immediately.

Peach Raspberry Parfait
Ingredients
1 ½ cups (12 fl oz or 1 ½ cans) chilled Homemade Vanilla Nepro
1 ½ tsp vanilla extract
4 Tbsp instant sugar-free fat-free vanilla pudding mix
¾ cup sugar-free nondairy whipped topping, divided
12 sugar-free shortbread cookies (3 per serving), crushed
1 fresh peach (sliced), or 1 cup canned sliced peaches packed in sugar-free syrup
½ cup fresh or unsweetened frozen raspberries
Directions
1. Combine the Nepro and vanilla extract in a mixing bowl and whisk in the pudding mix. Mix vigorously for 2 minutes until thick.
2. Fold in ½ cup whipped topping.
3. Pour into an airtight container and chill for 30 minutes.
4. Arrange 4 serving containers, scoop ¼ cup sliced peaches into each container, and add three crushed cookies to each container.
5. Top each container with ½ cup of pudding, 1 Tbsp sugar-free nondairy whipped topping, and a few raspberries. Garnish with fresh mint as desired.

Ingredients
1 8-fl-oz can Vanilla Nepro, chilled
1 cup regular peach yogurt
½ cup canned peaches, drained
Directions
1. Combine ingredients in blender.
